Fresh, Healthy Fish Goujons

 

This recipe makes a enough for 2 adults, and are a fresh, tasty and healthy alternative - and are a great weekend meal for the family.

Makes: 2 servings; Total time: 45minutes

 

INGREDIENTS

- 500g cod fillets, chopped into thumb sized pieces
- 2 tablespoons of olive oil
- 140g cornflakes
- 2 eggs
- 2 carrots, peeled & chopped
- 300g broccoli, chopped
- 600g potatoes, peeled and chopped into chips

 

INSTRUCTIONS

  1. Preheat oven to 200C/ 400F/ Gas Mark 6.

  2. Cover a baking tray in aluminium foil. Drizzle with oil onto the baking tray and scatter the chips on top.

  3. Cook for 20 minutes in the oven.  

  4. Mix the eggs in a bowl. 

  5. Put cornflakes into a ziplock bag and crush with a rolling pin. Pour crushed cornflakes into a bowl.            

  6. Dip the cod strips into the egg and then the crushed cornflakes.                                        

  7. Place the fish goujons on an aluminium foil covered baking tray.  Increase the oven to 220C/ 425F/ Gas Mark 7 and place in the oven for 5 minutes with the chips.

  8. Meanwhile blanch the broccoli and carrots for 2-3 minutes.

  9. Take the chips out when golden brown.

Serve the fish goujons with the steamed vegetables and chips
